The Lillnord SUPRALINE dough controllers are specially designed units for long term storage of all types of dough pieces without any deterioration whatsoever in bread quality. From the production planning point of view the aim is to optimize the weekly production in such a way that large numbers and many varieties may be produced during what is generally termed normal working hours and then stored for 1 or 2 weeks maximum.
At the busy hours of the week or at weekends stored products may then be taken from the Supraline into a Flexiline unit (with thaw out) or a freezer prover for subsequent bake-off. In this way product variety from the early morning hours is secured and further the daily workflow may be planned without the well-known bottlenecks.
